Commercial Dishwasher Protocols

Every PATRA white ware piece is engineered to endure commercial high-temperature dishwashing cycles without surface crazing or dulled glaze finish.

  • Pre-rinse with non-abrasive scrapers
  • Use non-chlorinated, pH-neutral detergents
  • Position in peg racks without touching surfaces
  • Hand-wash gold and platinum banded pieces

Microwave & Oven Safety

Vitrified white ceramic bodies provide excellent thermal endurance, supporting standard commercial warming and salamander finishing applications.

  • Plain white ware oven-safe up to 200°C (392°F)
  • Microwave safe for all unadorned collections
  • Avoid sudden thermal shock transitions
  • Never heat metallic or precious-metal trimmed ware

Back-of-House Handling & Storage

Proper stacking and handling techniques reduce rim chipping, mechanical impact damage, and surface scratching during rapid service turns.

  • Stack only identical shape profiles together
  • Avoid stacking holloware above standard limits
  • Utilize rubber-coated dish racks and shelving
  • Buff flatware metal marks with mild cream polish

Standard Operating Procedures

Protecting Glaze Durability & Precious Metal Trim

Follow these manufacturer recommendations for extended performance in demanding hospitality settings.

1. Commercial Warewashing & Temperature Control

Before loading into commercial dishmachines, scrape off food leftovers using soft rubber or plastic spatulas. Avoid metal scrapers or abrasive pads that can scratch the smooth glaze surface. Ensure wash temperatures adhere to local health codes (typically 60°C–65°C for wash cycles and 80°C–85°C for final sanitizing rinse). Allow items to air-dry completely in racks before stacking to prevent moisture trapping and thermal stress.

2. Precious Metal Care (Gold & Platinum Decoration)

Collections embellished with on-glaze gold, platinum, or metallic luster bands require specialized handling. Because precious metals are softer than the underlying porcelain glaze, frequent exposure to high-alkaline commercial detergents and aggressive wash water pressures can wear down metal banding over time. For maximum service life, clean decorated items using mild liquid detergents and warm water with soft sponge pads.

3. Preventing Thermal Shock Breakage

Thermal shock occurs when ceramic ware experiences drastic, rapid temperature variance (e.g., transferring a plate directly from cold walk-in refrigeration into a hot finishing oven). Although PATRA vitrified porcelain exhibits superior thermal tolerance up to 200°C (392°F), gradual heating and cooling cycles are essential to avoid stress fractures. Never place hot tableware onto cold moist metal surfaces or immerse hot items into cold wash water.

4. Managing Metal Marking (Flatware Deposit Removal)

Grey or black line marks appearing on plate surfaces are often mistaken for glaze cracks. These are actual metal deposits transferred from softer stainless steel cutlery onto the diamond-hard, vitrified porcelain surface. Metal marking is a surface phenomenon and does not compromise structural integrity. Remove metal deposits effortlessly by rubbing the affected area with a mild, non-abrasive cream cleaner or dedicated ceramic polish.

Operational FAQs

Care & Maintenance Questions

Yes, all PATRA white ware porcelain and bone china items are fully vitrified and engineered for commercial conveyor and under-counter dishwashers. For items with gold, platinum, or delicate overglaze banding, hand-washing or low-temperature gentle cycles with mild detergents are recommended to prolong decoration life.

All plain white ware products are safe for microwave and conventional oven use up to 200°C (392°F). Items adorned with metallic gold, silver, or platinum trims must never be microwaved or exposed to direct flame.

Grey lines are typically metal marks caused by softer flatware rubbing against the extremely hard, vitrified glaze of high-fired ceramic. These marks are non-destructive and can easily be buffed off using mild, non-abrasive cream cleaners or dedicated stainless steel polish.

To prevent rim chipping, stack items only with identical shape profiles, avoid overloading dishwasher racks, and train staff to refrain from slide-stacking plates across rough stainless steel countertops. Utilizing rubber-lined dish baskets and protective divider pads significantly extends service life.
